Numerous studies have found that foods rich in antioxidants, potassium, and vitamins A and C limit the skin-damaging effects of ultraviolet (UV) radiation. These foods do not replace sunscreen, nor do they make it acceptable to fry the skin in cancer accelerating tanning beds. Foods rich in antioxidants should be eaten every day of the year in addition to applying a mineral based sunscreen which should be re-applied after sweating, swimming, or showering.
Foods high in potassium and vitamins A and C include: avocado, acorn squash, banana, bell pepper, broccoli, Brussel sprouts, citrus fruits, coconut water, dried apricot, papaya, pomegranate, strawberries, sweet potato, wild-caught Pacific salmon, white beans, and dark leafy greens, such as kale, mustard greens, spinach, and chard.
